Are you ready for a slice of fun? This month’s we’re having a PIZZA PARTY and turning our kitchens into Little Italy as we bake a GIANT chocolate chip pizza cookie! Mamma Mia that sounds amazing!

We love making pizzas at home and what better way to spend a Friday night than making your own home-made pizzas and watching movies! Annie and I recently had our own Pizza party making own pizzas from scratch and baking the Giant Chocolate Chip Cookie Pizza in this month’s kit for dessert and it was really the best fun we’ve had all month. Every Italian Chef needs a hat so this month we’ve included a fun little craft to make your own Chef hat as well as a Pizza Box – just name your Pizzeria and write the name onto your box!

For the perfect Pizza evening, ask mom to make some pizza dough or buy some ready made pizza bases, help her chop up some pizza toppings, bake some delicious pizzas and enjoy our Giant Pizza Cookie for dessert. It’s a pizza cake!

 STEP 1

Baking Your Pizza Cookie 

Preheat oven to 180°C. Grease your pizza pan with non-stick spray or butter. If you don’t have a pizza pan, use a large pie dish about 28cm in diameter. 

Using a hand mixer or a stand mixer fitted with a paddle attachment, cream the butter and sugar together on medium speed until smooth, about 2 minutes. Add the egg and beat on high until combined, about 1 minute. Scrape down the sides and bottom of the bowl as needed. Add the vanilla essence, then mix on high until combined.

Add the dry ingredients to the wet ingredients and mix on low until combined. With the mixer running on low speed, add the chocolate chips. Dough will be thick and soft.

Transfer the cookie dough to the pizza pan or pie fish and flatten out with your fingers or a rubber spatula until the edges reach the sides (or just about to the sides).

Bake for 22-25 minutes or until puffed and lightly browned on top. If you want the cookie pizza a little crispier on the edges, bake for a couple extra minutes. Allow the cookie pizza to cool completely on the pan set on a wire rack. 

STEP 2

Decorating your Pizza 

Place red ganache “pizza sauce” in microwave for 20 seconds until melted. Spread the pizza sauce onto your cooled cookie leaving the edges of the pizza base un-iced.

Use the Royal Icing provided in your kit for the “Cheese”. If the Royal Icing has separated (this is normal) gently knead the icing bag for one to two minutes for the icing to combine again. To make the icing look like cheese, cut the tip off using a pair of scissors. Only cut the tip a TINY bit. This will look like finely grated cheese. After you have drizzled the grated shredded cheese across the cake, cut the tip a little more and go over the cake again. This will create the look of grated cheese in different stages of melting. Drizzle and drop the icing randomly all over the cookie.

Have fun placing your Pepperoni, green pepper, olives and mushroom toppings onto your Pizza.

Giant Chocolate Chip Cookie

Ingredients

  • 250 grams all-purpose flour 
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 170 grams  unsalted butter, softened to room temperature
  • 150 grams packed light or dark brown sugar
  • 50 grams granulated white sugar
  • 1 large egg, at room temperature
  • 2 teaspoons vanilla essence
  • 225 grams semi-sweet chocolate chips

Instructions
