This year being a mom has been really hard, we’ve doubted ourselves more and needed to dig really deep to be strong for our family. 2020 is certainly going to be a year we all remember and talk about for generations to come, it is also one which will be remembered fondly as the year we got to slow down, when quality time was the norm and where we were reminded what is most important in life … our family. Moms are the cornerstone of every family, the heart and soul, nurturing, caring always reassuring us that everything is going to be okay, and this year we need that more than ever.

This month we celebrate Mom, and Granny and Aunty and all those women in our lives who nurture and love us unconditionally. So we thought what better way to do this than spoiling them with a handmade treat and card on Mother’s Day. Our May Mystery Bake are delicious muffins with a crunchy Streusel (crumble) topping, the perfect Breakfast in Bed treat for mom! We also included some Mother’s Day craft activities to show mom how much we appreciate her, after all we would be muffin without mom!

Ready to bake some sweet memories? Let’s get baking!

STEP 1

Making your Streusel Topping

Cut 60g of cold butter into smallish chunks.

Place butter and streusel mix in a medium bowl and rub together with your

fingertips until crumbs form. Refrigerate.

 

STEP 2

Making your Muffins

Preheat oven to 180° C and line a 12-cup muffin pan with the white muffin liners.

Place 200 ml of water and 200ml of oil into a mixing bowl first, this will ensure proper mixing. Then add the Muffin Premix.

Using a stand or handheld mixer mix for ± 2 minutes on medium speed and 5 minutes on fast speed.

Fold in your chosen filling into the batter. I chose to make my favourite blueberry muffins but there are so many different flavours you can choose such as raspberries, apples (who doesn’t love apple crumble) or strawberries or dates.

Evenly divide your batter amongst your muffin cups.

Sprinkle the muffin batter with the chilled streusel topping.

Bake at 180° C for 22-30 minutes. Some fillings such as frozen fruit bake longer than others. Bake your muffins until a skewer inserted in the middle comes out clean.

Remove and allow to cool.

Once cooled pop your muffins into the pretty pink and purple tulip wrappers in your kit.

 

STEP 3

Decorating your Muffins

Place the pink and purple chocolate piping bags into the microwave and microwave at 30 second intervals until the chocolate is melted.

Lay out a large sheet of parchment paper and cut small holes at the end of your piping bags.

Be creative and pipe (draw) different sized hearts and words onto the parchment paper. Allow the chocolate to set, peel off the parchment paper and decorate your muffins with your chocolate decorations.

 

CRAFT ACTIVITIES 

Making your Mother’s Day Crafts

“Muffin to Do but Appreciate Mom” 

Start by colouring in or painting your muffin activity.

Complete 12 sentences about mom using the pink sheet included in your kit. If you have siblings share these between each of you. Cut out the strips.

Roll each strip around a pencil, word side touching the pencil.

Then glue the ends of the strips to the squares of the image.

How sweet will it be when Mom rolls out each of these little strips!

“All about Mom” 

We’ve created a fun activity all about mom. Take the time to complete each of the sentences, draw a picture of Mom and decorate your card.

If you want to make more cards for Granny or Aunty we have included a copy of the artwork to our blog. Simply print on card stock and follow the above directions!
